Ingredients:
2 Tbsp. olive oil
1/2 cup chopped onion
1 cup chopped celery
2 cups cooked turkey diced
1 quart turkey stock or chicken broth
1 cup cooked rice (white, wild or combo)
1 carrot, shredded
3/4 cup cooked (or frozen or canned) corn
1/2 cup sauteed mushrooms, chopped
2 Tbsp. chopped fresh parsley
1 Tbsp. tarragon
Salt and cracked black pepper to taste
Directions:
In large soup pan with olive oil, cook celery and onion until tender. Add remaining ingredients. Heat thoroughly. Garnish with parsley if desired.
