1 pk Boneless fresh turkey breast slices; about 1 lb
4 c Torn fresh spinach
2 md Yellow summer squash or zucchini, sliced
2 md Oranges; peeled, sectioned cut into 1/2 inch pieces
1 1/2 ts Chili powder
1/4 ts Salt
1/4 ts Cayenne
1/8 ts Garlic powder
2 tb Oil
1/4 c Red onion; chopped
1 tb Sugar
1/2 c Orange juice
2 tb Lime juice
In large bowl, combine spinach, squash and oranges. Set aside.
Cut each turkey breast slice in half. In med bowl, combine chili powder, salt, cayenne, and garlic powder. Add turkey; toss to coat. Heat oil in 12 inch skillet over med high heat until oil sizzles, about 1 minute. Add turkey. Cook 1 1/2 to 2 mins on each side or until lightly browned. In small bowl combine onion, sugar, orange juice and lime juice, blend well. Add to turkey in skillet. Cook 2 mins, stirring occasionally. Spoon turkey mixture over spinach mixture; toss gently to coat. Serve immediately.
